The wine is made using a delicate process, starting with a light pressing of the whole clusters to separate the solids and juice. The juice is then allowed to rest for 24 hours, which aids in the settling of the heavy lees and solids. The wine undergoes a natural fermentation process, where only the yeasts present on the grapes or in the winery are used. The juice is then transferred to 90% new French oak barrels and 10% concrete tanks, where it spends the majority of its time. The fermentation process takes up to 90 days, allowing for the malolactic fermentation to elevate the body of the wine. The fine lees are stirred once a week to enhance interaction between the wine and polysaccharides, contributing to a richer mouthfeel. After aging for 12 months, only the barrels and concrete aged wines that make the grade are blended to produce this exquisite Santa Barbara Chardonnay. With its delicate balance of oak, fruit, and acidity, this wine is sure to impress even the most discerning palate.
